Would you entertain the idea of a "swing manager" who would fill in on the regular manager's days off and holidays? The swing would have to have extensive restaurant experience to protect the restaurant from falling to pieces during the regular manager's days off. His/her experience would be most valuable if any prior restaurant experience was in full service restaurants with multi-unit full service organizations a plus. If this is something you would consider, I could be your man.
