Job: Sous Chef

Dr. A.J. Chandler built the Hotel San Marcos and Golf Course in 1912. The resort was designed to be a luxurious desert retreat for the rich and famous. It catered to celebrities, business magnates, gangsters, athletes, and artists from around the world.

Now called the Crowne Plaza San Marcos Golf Resort, it was awarded National Landmark Status. The resort is on the National Register of Historic Places and continues the tradition of outstanding service to its guests.

We are seeking a talented and creative Restaurant Chef for our casual/fine dining restaurant and room service.

Essential Duties and Responsibilities:
* Establish and maintain food quality standards.
* Achieve budgeted revenue, labor and food cost.
* Conduct daily walk through of all walk in refrigerators, storage rooms and
food lines to ensure rotation.
* Direct the presentation and portioning of food according to HMC Standards.
* Train staff in use of working menus, recipe cards and photos.
* Direct staff in sanitation and sanitary food handling.
* Monitor procedures for credit control and handling of financial transactions.
* Investigate and resolve food quality and service concerns.

Qualifications:
* Minimum 2 years cooking experience.
* Creativity in developing menu and daily specials.
* College Degree or certification in culinary field. Hospitality or hotel background preferred.
* Ability to train associates in food handling and sanitation.
* Proven communication skills essential.
* Effective time management techniques a must.
* Maintain labor costs, revenues to meet or exceed budget.
* Ability to work flexible hours (evenings, weekends, holidays).
* Self-motivated, pro-active and energetic individual.
